Our team is feeling a bit nostalgic from user summits past, now that we are back from Lake Buena Vista, FL, it made us think about a favorite Thanksgiving recipe. That’s right, user summits and our customers inspire us in many ways in addition to creating and maintaining a better Lumens.
One of Augusoft’s favorite holiday recipes was procured at the 2012 User Summit Customer Dinner at Zaytinya, a Mediterranean restaurant in Washington D.C. If you’re looking for a great recipe with a bit of Mediterranean flare, try one of our staff favorites this holiday!
Brussels Sprouts Afelia from Zaytinya
1 lbs fresh Brussels sprouts
1/2 cup plain Greek yogurt
1 tbsp olive oil
Roasted pine nuts
2 tsp salt, or to taste
1 tsp coriander seeds, toasted in a hot pan, then crushed
approximately 1/8 cup pomegranate seeds
1/4 cup dried cranberries, soaked in warm water until soft
Heat a frying pan very hot. Add a tablespoon olive oil and Brussels sprouts, and some salt.
Allow to blacken and char on both sides – toss the sprouts around. This may take 10 minutes or so.
Mix yogurt, olive oil and salt together in a separate dish.
Allow sprouts to cool.
Put a layer of yogurt sauce on a dish.
Then layer sprouts, toasted coriander, then pine nuts, dried pomegranate seeds and pomegranate seeds.
